Vegan stew with white beans, leek and artichokes

Hey lads,
my first recipe is for an English, vegan stew. It's delicious and easy to cook!

Original recipe: Meera Sodha’s vegan recipe for white bean, leek and artichoke stew

Ingredients

red onions
cloves of garlic
leek
jarred artichokes in oil
white beans
peas
broth
lemon juice
fresh mint
parsley

  1. Lightly fry the chopped onions in oil over a medium heat, then add the broth to the pot, season with salt and cook for approx. 8 minutes.

  2. Now slam the finely chopped garlic and leek to the pot and cook for 5 minutes.
  3. Then add the artichokes, white beans and peas, stirring well, and cook for a further 5 minutes.
  4. Finally, add the herbs: mint, parsley, lemon juice and pepper.
  5. Stir thoroughly and it is ready!

Serve with sourdough or any other bread you like, or enjoy it on its own.
