Hey lads,
my first recipe is for an English, vegan stew. It's delicious and easy to cook!
Original recipe: Meera Sodha’s vegan recipe for white bean, leek and artichoke stew
Ingredients
| red onions | |
| cloves of garlic | |
| leek | |
| jarred artichokes in oil | |
| white beans | |
| peas | |
| broth | |
| lemon juice | |
| fresh mint | |
| parsley |
Lightly fry the chopped onions in oil over a medium heat, then add the broth to the pot, season with salt and cook for approx. 8 minutes.
- Now slam the finely chopped garlic and leek to the pot and cook for 5 minutes.
- Then add the artichokes, white beans and peas, stirring well, and cook for a further 5 minutes.
- Finally, add the herbs: mint, parsley, lemon juice and pepper.
- Stir thoroughly and it is ready!
Serve with sourdough or any other bread you like, or enjoy it on its own.
